Happy Valentine’s Day: Gluten Free Waffles


 

 

Happy Valentine’s Day!

The Best Thing To Hold Onto In Life Is Each other…or so I woke up , wishing my dear husband earlier this morning. And while there was every temptation to reach out for some thing sugary and calorie laden for breakfast, I decided to go and make up with these wonderful Gluten free waffles!

Those of you who do follow me on various social media, have  perhaps seen my recent posts on low carb, sugar and gluten and keto friendly bakes. Well I must say that 2020 has begun on a much healthier note.

 

Mind you not an easy decision to make  as I’m a Baker at heart and by profession,and now in the process of re working all my recipes to suit this change in life style, with the occasional indulgence of course.

The above recipe has been adapted form the Bobs Red Mill web page. I do love their range of various gluten free flours and almond meal that work fantastic in all my recipes. whilst the original recipe calls for the use of only gluten free flour, I’ve added in some almond meal as well and substituted the sugar with Swerve, which has now become my go to sweetener for my healthy bakes.

Go give these waffles a try with dash of maple syrup, fresh raspberries and a dusting of Icing sugar. Pamper your loved one’s a little and have yourselves a loved day!

Ingredients:

1 cups Gluten Free All Purpose Baking Flour
1/2 cup Almond flour
2 tsp Baking Powder
1/2 tsp Baking Soda
1/2 tsp Salt
1 Tbsp Swerve sweeter or Sugar
1 Tbsp Oil
3/4 cup Almond Milk
4 Eggs separated
1 tsp Vanilla Extract

Directions:

  1. Pre-heat a waffle iron.
  2. In a large bowl, mix the flour, baking powder, soda, salt and sugar together.
    In a separate bowl, whip the egg whites until they form stiff peaks or resembles whipping cream.
  3. In a small bowl, whisk together milk, yolks, vanilla and oil. Add the milk mixture to the dry ingredients and blend together. With a rubber spatula, slowly fold in egg whites with the rest of the ingredients. The entire mix should be light and fluffy.
  4. Spray waffle iron and begin making waffles. Follow the waffle machine instructions or cook about 3 minutes on each side.
  5. Serve hot waffles with some maple syrup, fresh raspberries and a dusting of Icing sugar
