Kale Chips

    Imagine eating a packet of crisps without the guilt? Now I’m not talking about the potato ones,all though I must admit I’m insanely crazy about potato chips. Of course a healthier option is always welcome with everyone on a diet of sorts. I’ve been cooking with Kale for awhile in my kitchen.Well the family has been served a Kale soup on various occasions,sautéed Kale and yes even Kale juice. However the crisps are something I’d been shying away from,primarily from the fact that I just didn’t imagine they would turn out crisp enough. Every year, November 1st is celebrated as World Vegan Day.Well that’s what I did yesterday,finally braved the idea of experimenting with baking up some Kale crisps. I woke to a gorgeous bunch of curly Kale that I had picked up at the last of the farmer’s markets around our neighbourhood here in Toronto. Not soup please, hollered my son,who has been pottering around the kitchen wondering what I’m planning to rustle up for him.Why not try out some Kale crisps …

Falafel Salad Bowl

  Having lived in the Middle East for a little less than two decades, our taste buds tend to gravitate to wonderful middle eastern flavours that revive memories of our stay as expats in Dubai. Our dinners quite often have a hint of levantine spices and ingredients, and my kitchen pantry is almost always stocked with  za’taar and sumac spices, pomegranate molasses,preserved lemons, sesame seeds, saffron and olive oil. The tahini sauce has also come to be a  sought after condiment and used quite frequently to accompany many of my meals. Last week I decided to make up a  Falafel Salad Bowl for a light and easy lunch. The Falafels and the Tahini sauce have been made from scratch and the recipe is as explained below. Now most often I do bake the Pita breads too,however time being of essence,I had to make do with store bought ones! Food Like A Loving Touch Or A Glimpse Of Divine Power Has The Ability To Comfort…   Let’s say we all have our Comfort foods.I for one crave a simple meal especially after a busy day at work,perhaps when I’m low and even especially after travelling and being away from home for awhile.It also has a lot to do with the kind of flavours one grew up on.I spent a large part of my childhood with my grandparents.My grandmother was a great cook and while meat and fish dishes were a regular  at the dinner table,she cooked a variety of vegetarian meals as well.And yes potatoes were always the family favourite.She would often make potatoes with onions and spices and this was very often made it to our lunch boxes..There are certain flavour’s that linger on and taste just like childhood.Well here is a recipe that reminds me of my grand mom’s cooking,and curiously enough, instantly transports me back  to her kitchen.Well of course food that is linked to childhood nostalgia often brings on a cooking …
