Beetroot Hummus

Hummus, the  delightful and quintessential middle eastern dip that works magical as a healthy and delicious snack. A combination of crushed chickpeas, tahini (sesame paste) some lemon juice,garlic and olive oil all blended together to luscious creamy texture. And Voila a delicious dip to serve with grilled meats,crisp pita or even some chopped vegetables. How about jazzing up your favorite Hummus recipe with the goodness of beetroot? I’ve used some beetroot puree into a batch that I made up earlier this week.The beetroot adds a wonderful vibrant hue to the hummus, lends a delicate flavour too and looks absolutely stunning. The best part about this recipe is that it comes together in less than 10 minutes. I have used boiled beetroots that have been pureed but you may like to roast the beets to elevate the flavours, if you like. Cooking My Secret Indian Recipe in the Kitchens of Renaissance Mumbai: Kolhapuri Mutton Masala

  I was absolutely thrilled when I was approached by Secretindianrecipe.com a couple of weeks ago, inviting me to a wonderful event at the Renaissance Mumbai convention center. The focus of the event being  a series of cook offs promoting home chefs at the hotel kitchens. It kicked off on Mothers Day in May this year and was proposed for a period for six weeks thereafter .This would mean each participant would have to submit their secret indian recipe that they would like to cook at the hotel kitchen. I knew exactly what my secret recipe was and how I would go about it. It would have to be the Mutton Kolhapuri that I learned from my Grandmothers kitchen. A fiery and aromatic curry and certainly not for the faint hearted.         I’m running out of breakfast ideas and more so as the teen is home and is certainly a big brekkie person. He’s down from University for the summer and is finally getting into a routine of sorts. Well lets say his day begins at the gym as he is quite the fitness buff. To add to this a very conscious and careful eater, which is great as he has quite some healthy ways to start his day with. But this of course leaves me in a quandary with the eternal question of What to cook?

Challah Bread with Vanilla & Chia seeds

    Mother’s hold their children’s hands for a short while, but their hearts forever… Happy Mother’s Day lovelies!     It’s but natural I write this quote as it felt like just yesterday that my son was  really little and only five. How time has flow by and that little one is now eighteen and quite an  independent adult. He is down from university for the summer and yes it’s baking mania in my kitchen! He’s away at a friends and I’ve been baking up a storm tonight. Started off with a batch of double fudge brownies and then was just aching to try this Challah recipe that keeps wanting to be made. I’ve adapted this one from my lovely Kitchenaid cookbook that I received, when I bought my food processor last year. Now the recipe calls for using the dough attachment for kneading ,all though I’ve just used the hand technique.
