Chocolate Cake: This one’s for you JD

Today I got down to baking this moist and gooey Chocolate cake.I’d rather call it “THE ULTIMATE CHOCOLATE DECADENCE”.The best ever chocolate-y cake ever.Quite an easy one to put together.This one’s actually the celebration cake in our home.Sure enough for very Birthday,Anniversary and now even on Valentines,I land up baking this one.No special day today….just thought to myself…well chocolate needs no occasion right? Also given the fact that everyone in my family is a Chocoholic this one won’t last that long. The icing is a smooth,dark and velvety one.I’ve used dark chocolate(70%) cocoa.Lindt makes a good one for the icing.I’ve used some roughly chopped walnuts over the icing(that’s just me,love walnuts in practically everything) And then dusted it with some icing sugar…  Love at First Bite…. Apple Cinnamon pancakes

Tuesday, April 26, 2011 Apple Cinnamon pancakes Woke up this morning with applesauce and cinnamon on my mind…My sister’s visiting and I thought of making her some pancakes…. .I’ve added some wheat bran which is high in fibre and the cinnamon and apple sauce give it such a wonderful twist….She ofcourse loved them and then my son enyoyed them as well Ingredients: 1 1/2  cups All purpose flour 1  tablespoons wheat bran (optional) 3 tablespoons unsweetned applesauce Milk to mix the batter (should not be runny) 1 egg (lightly beaten) 2 1/2  teaspoons baking powder 2 tablespoon melted butter 1 tablespoon brown sugar 1/2 teaspoon cinnamon powder Handfull of rasins and walnuts Method: Beat the egg till light and fluffy. Mix the flour, melted butter, baking powder, sugar and cinnamon powder. Add milk till the batter is smooth. Batter should not be too runny. Add the applesauce and mix well. Brush a pan with some oil and pour the pancake batter Cook untill the edges are a little dry and brown on both sides. Add some rasins …

Banana Nut Cake

Now who wouldn’t enjoy a slice of this warm banana loaf with a nice hot cuppa!!! This one is a favorite with my family…Got to hand to my mum who shared this with me while growing up….I still remember pottering around the kitchen while she baked….Such wonderful memories!!!  Ingredients: 150 grams–flour 150 grams-sugar 2-eggs 2-bananas 50 grams raisins 50 grams walnuts 50-butter 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon Vanilla essence METHOD: Beat sugar and butter till light and creamy. Beat the eggs separately Mash both the bananas Add the sifted flour to the butter.Mix well and then add the mashed bananas Add the chopped walnuts and raisins Spread evenly in a loaf tin and bake @ 180C for about 20 minutes or till done Enjoy with a hot cuppa
