
Valentine’s Day is around the corner, and I was looking for a quick and delicious dessert to put together for the family. And with a V day dinner planned a day before the actual day, I decided to indulge in a easy dessert that celebrates love and sweetness in the best possible way.
I had some leftovers of a lemon pound cake and repurposing this along with some creamy whipped ricotta cheese, tangy and vibrant raspberries and some peanut brittle seemed to hit the perfect balance of flavours and texture.

- Use Of Fresh Ricotta: Fresh ricotta cheese tends to have a softer texture, making it easier to whip. If possible, choose ricotta that is freshly made or has a creamy consistency.
- Ricotta Should Be At Room Temperature: Before whipping, bring the ricotta cheese to room temperature. You could leave the tub on the counter for about 30 minutes to soften. This makes it much easier to whip, airy and creamy and also incorporates other ingredients smoothly.
- Addition Of Sweeteners and Flavorings: To enhance the flavor of the whipped ricotta, add sweeteners such as honey, maple syrup, powdered sugar, or vanilla extract. Aditionally flavorings like lemon zest or orange zest, cinnamon, or cocoa powder add immense depth.
- Use Of A Food Processor or Blender: While you can whip ricotta cheese by hand using a whisk, using a food processor or blender will yield smoother and creamier results in less time. Simply add the ricotta and any desired flavorings to the food processor or blender and process until smooth and creamy.
- Whip Until Light and Fluffy: Blend the ricotta cheese until it becomes light and fluffy, scraping down the sides of the bowl as needed to ensure even mixing. Be careful not to over-whip, as this can lead to a grainy texture.
- Adjust Consistency as Needed: Depending on the recipe you’re making, you may need to adjust the consistency of the whipped ricotta. If it’s too thick, you can thin it out with a splash of milk or cream. If it’s too thin, you can add a little more ricotta or powdered sugar to thicken it.
- Chill Before Using: For desserts that require chilled or set ricotta, such as cheesecake or parfaits, refrigerate the whipped ricotta for at least 30 minutes to allow it to firm up before using.

Ricotta Raspberry Parfait
(Serves 6)
Ingredients:
- Leftover lemon pound cake (cubed)
- 450 grams ricotta cheese
- 2 -3 tablespoons honey or maple syrup
- 1 teaspoon vanilla extract
- Fresh raspberries ( washed and patted dry)
- Peanut Brittle (store bought -for garnish)
- Piping bag and nozzle
Instructions:
- In a mixing bowl, combine the ricotta cheese, honey, and vanilla extract. Mix till well combined and smooth. Taste and adjust sweetness if necessary. You may hand whip the mixture or choose to use a food processor or a blender.
- Rinse the fresh raspberries under cold water and pat them dry with a kitchen towel.
- Fit a nozzle of your choice into a piping bag and spoon in the whipped ricotta.
- Start by layering the glass with a mixture of the cubed pound cake.
- Pipe some whipped ricotta over this.
- Repeat the layers until the glass is filled.
- Garnish with fresh raspberries and the peanut brittle..
- Refrigerate the parfait for at least 30 minutes so that all the flavours combine well.
- Serve chilled and enjoy the delightful combination of flavors and textures in each spoonful.
With just a few simple ingredients and some ingenuity , you can turn leftover lemon pound cake into a gorgeous dessert that’s perfect for Valentine’s Day or any special occasion.
