Baba Ghanoush

This is a wonderful dish made from grilled eggplants.It has a strong smoky flavour especially if the eggplants have been grilled on a charcoal barbecue. I often serve this a dip with toasted pita bread.However it could also be used as side dish or even a salad if topped with more garnishing. INGREDIENTS: 2 Medium eggplants 50 ml tahina(store-bought) 25 ml lemon juice 2 cloves garlic(minced) 1 tablespoon olive oil 1 teaspoon pomegranate seeds chopped parsley chopped tomatoes sprinkling of cumin powder sprinkling of paprika salt to taste

Laksa Fried Rice

This fragrant rice usually conjures up an image of a Laksa Noodle soup.However on a recent trip to Singapore I discovered a ready sauce called Laksa Fried Rice.I call this rice my weekday comfort food.Easy to put together and could be had with a stir fry or even just by itself.Deli sh to say the least. Interestingly the meaning of LAKSA is not clear.Some date it to perhaps and Indian or Persian origin.LAKHSHAH-which translates into “One Hundred Thousand(lakh) or the Chinese meaning would simply be”Spicy Sand” much because this sauce has a fairly grainy sandy texture to it.Its a wonderful sauce made up of Such an easy recipe to put together: INGREDIENTS: 2 Cups plain boiled rice 2 tablespoons sesame oil 3 whole green onions,chopped and the white and green parts seperated 11/2 cups chopped baby corn,mushrooms,peppers,carrots 1 inch fresh ginger,finely chopped 1 large egg,lightly beaten 2 tablespoons Laksa fried rice sauce Directions:  Heat oil in a large wok over very high heat.This is a key to any Chinese cooking. Banana Nut Cake

Now who wouldn’t enjoy a slice of this warm banana loaf with a nice hot cuppa!!! This one is a favorite with my family…Got to hand to my mum who shared this with me while growing up….I still remember pottering around the kitchen while she baked….Such wonderful memories!!!  Ingredients: 150 grams–flour 150 grams-sugar 2-eggs 2-bananas 50 grams raisins 50 grams walnuts 50-butter 1/2 teaspoon baking powder 1/2 teaspoon baking soda 1 teaspoon Vanilla essence METHOD: Beat sugar and butter till light and creamy. Beat the eggs separately Mash both the bananas Add the sifted flour to the butter.Mix well and then add the mashed bananas Add the chopped walnuts and raisins Spread evenly in a loaf tin and bake @ 180C for about 20 minutes or till done Enjoy with a hot cuppa

My Journey with Food…

What can I say….A passion for cooking and being surrounded by foodies all my life led me to get this blog started. My earliest memories of cooking always centered around mama’s kitchen. She’s a wonderful cook and an inspiration. Endless  summer afternoons spent  helping her bake loaves, cakes and cutting out doughnuts….I can still get a whiff of her fudge making….helping her throw in the walnuts and hearing her say “Just a minute it’s not done yet” and then of course licking the spoon after spreading the mix on the pan. Such wonderful memories. My husband too absolutely loves to experiment in the kitchen…I have learnt the art of cooking patiently from him. Invaluable lessons in cooking learnt from my Mother in law who taught me the basics of a good Curry.
